ام العربي نزلت البتي بان بطريقة الرغايف الله يجازيها كل خير و اعتمدت الطريقة
و بما انني كنحب التجديد رجعت كتعملهوم مالحين مع تغيير بسيط بالعجين
و الحشو كنتفنن فيه حسب الموجود فالبيت
بالنسبة للعجين
استعملت
نصف كيلو دقيق ابيض
بيضة
ملعقة و نصف سسنيدة
ملعقة صغيرة غير ممتلئة خميرة الحلوى
ملعقة كبيرة غير ممتلئة خميرة خاصة بالخبز اضفتلها رشة سكر و ماء دافئ تركتها ترتفع ربع ساعة رشة ملح ملعقتين زيت ماء دافئ للعجن
باناء مزجت النواشف الملح و السكر و لخميرة
اضفت الزيت ثم الخميرة بعد ما ارتفعت ثم البيضة بعد ما خفقتها مسبقا
مزجت الكل و اضفت الماء الدافئ وحصلت على عجين لين عجنته لمدة 10د و تركته ساعة زمن يختمر
فهالاثناء جهزت الحشو و كان عبارة عن بصلة متوسطة و ربع حبة فليفلة خضرا قليتهم فشوية زيت قبل ما اضيف اللكفتة و الملح و الابزار و الكمون و اسودانية ثم القزبورومعدونس و مزجت الكل حتى نضج
اضفت الفرميسيلي الصينية بعد ما تركتها 5د بماء غليان و قطعتها و صفيتها و اضفت زيتون اخضر مقطع
بعد ما اختمرت العجينة شكلت منها 20 حبة بحجم البيضة وتركتها ترتاح ربع ساعة
بسطتها بمسحة زيت و دهنتها بمسحة زبدة لينة و شكلتها فحال المسمن و حصلت على حجم صغير جميل
اتميت الكمية كلها
تركتها ترتاح تقريبا ربع ساعة
جهزت بيضة مخفوقة
بسطت المربعات و ومسحت عالجوانب بالبيض و اضفت الحشو و اغلقت المثلثات بالاصابع و ثبتها بافرشيطة
دهنتها بصفار البيض و رشيت زنجلان و ارسلتها لفرن سااخن
وبصحتكوم و راحتكوم
